There are only two parts of the lobster you can't eat: the intestinal tract and the sac behind its eyes.The intestinal tract runs through the tail of the lobster and is usually black. (Just pull it out with the tip of your knife.) The sac behind the eyes contains not only the lobster's brains but also its stomach and other internal organs, and it just doesn't agree with the human digestive system.
All the rest of the creature is edible and delicious. Chefs even use the hard outer shell to make a bisque, or broth. You might have noticed in the lobster's abdomen a light-greenish, creamy substance. This is the liver, also known as the tomalley. It is delicious eaten as is or it can be used to flavor spreads, butters, sauces or dips.
If you buy a female lobster, you might find a dense, orange-colored substance in the abdomen. This is the roe, the lobster's unfertilised eggs, and is also known as the coral. Some people buy female lobsters only in order to get this roe, which can be used as a colorful garnish for hors d'oeuvres and salads.
